Frost Wine Reviews: Banrock Station Shiraz Mataro

This Shiraz is very easy to drink, not necessary a good thing!, it has just the right amount of spice and fruitiness.  As a general rule of thumb, the darker a red wine the younger it is, the lighter it is, the older it is, this wine is just the right colour. It has pepper as the main aroma, and it has a lovely taste of blackberries, blackcurrants and plums. As I have said before, I am quite fussy about red wine although I liked this one. It taste great with spaghetti bolognese and doesn’t have a bad aftertaste. Also it is not too acidic.

The ideal accompaniment to enjoy with red meats such as venison or beef steak as well as mushroom based dishes.

Frost Wine Reviews: Kumala Zenith Rosé

Kumala Zenith Rosé is a vibrant pink rosé. It is clean and fruity. Rosé is always a good bet for parties, you never know if people will like red or white. It is better to buy a Rosé as if it is slightly off, it is not as bad as a harsh red or a stale, acid white. The sweetness will mask anything gone wrong. I love Rosé, although some people can find certain brands too sweet.

I did not find the Zenith Rosé too sweet, it is a clean, fruity wine that has a lot of strawberry, perfect for summer. It has an average, and good, alcohol content of 12%. It is a South African wine made from red grapes. A small amount of French oak is fermented with the wine to give it’s strawberry flavour and the creamy aroma.

With lovely aromas of strawberry, this fruity wine is great for those looking to treat their taste buds alongside a delicious summer salad

Frost Wine Reviews: Kumala Cabernet Shiraz

I rarely drink red wine, and when I do it is normally mulled. This means I set the barometer very high. However, I liked Kumala Cabernet Shiraz. It has a lingering aftertaste of chocolate. If that doesn’t win me over, nothing will.

It is a very beautiful bright red colour, with ripe tannins and a fruity flavour. I like its smoothness and it also has some spicy notes. I can also taste red berry and a hint of nuttiness.

The wine will make a perfect partner to fillet steaks, lamb chops and hearty stews. RRP£6.79

Frost Wine Reviews: Banrock Moscato

I have a sweet tooth and I really loved this wine. It was fruity and fresh, the perfect summer wine. It’s light and sweet, only 5.5% Vol. Perhaps not a wine for men though, considering the guys who tried it said it wasn’t their thing.

This pretty, pink-coloured Moscato is a dessert wine, though I recommend drinking it whenever you want! With a hint of peach, it’s fruity and perfect for people who don’t like dry, acidic wine. I reckon it will also be popular with people who don’t usually like wine at all!

I highly recommend it for girly afternoons in the sun and BBQ’s.

Greg Rusedski's Creamy Fish Pie with Cheese and Potato Topping

Prepare Ahead

Preheat the oven to 200’C / 180’C Fan/ Gas 4. Have a 1.5L ovenproof dish ready.
Instructions
1. Cook the potatoes in lightly salted boiling water until just tender; drain well then return to the hot saucepan. Mash together with 25g butter and 4 tbsp cream or milk. Beat in half the cheese and season to taste.
2. Meanwhile heat 450ml milk in a saucepan, add the fish, cover with a lid and poach gently for 4-5 minutes. Use a slotted spoon to strain and transfer the fish to a 1.5L ovenproof dish.
3. To make the sauce, melt 50g butter into the hot milk then sprinkle on the flour. Heat gently, whisking continuously until the sauce thickens and becomes smooth. Check the seasoning. Stir in the peas and chopped eggs then pour over the cooked fish.
4. Carefully spread the potato topping out evenly over the filling. Scatter on the remaining cheese mixed with the breadcrumbs or crisps, if using.
5. Bake in the oven for 20-25 minutes until piping hot with a golden brown potato topping.

* 1½ kg Ocado Perfect for Mashing Potatoes, peeled
* 75g Butter
* 50g Ocado Mature Cheddar Cheese, grated
* 1 handful fresh Breadcrumbs or crumbled Plain Crisps (optional)
* 2 x 320g Ocado Fish Pie Mix
* 450ml Semi-Skimmed Milk, plus 4tbsp for the mash
* 50g Plain Four
* 2 Ocado Free Range Eggs, hard-boiled, roughly chopped
* 200g Ocado Fresh Shelled Garden Peas (optional)
* 1 pinch Salt , to taste
* 1 pinch Pepper, to taste

GREG RUSEDSKI’S DISHES FOR FAMILIES: Apple Sorbet

This grown up pudding is a perfect end to a rich meal, light and refreshing but still a sweet treat.
Instructions

1. Place the sugar and 125ml of water in a saucepan and cook stirring until the sugar has dissolved.
2. Add the apples and cook until softened. Remove from the heat and leave to cool, then blend to a puree.
3. Stir in the corn syrup and dessert wine. Pour into a shallow freezerproof container, and freeze for 2 hours.
4. Remove from the freezer and whisk or stir briskly with a fork to break up the ice crystals. Return to the freezer and repeat this process 3 more times, before serving in scoops.

* 125g Caster Sugar
* 8 Apples, peeled, cored and sliced.
* 2 tbsp Corn Syrup
* 200ml Sweet Dessert Wine

GREG RUSEDSKI’S DISHES FOR FAMILIES: Portabella Burgers

Fancy a satisfyingly juicy, filling alternative to beef burgers? Chunky portabella mushrooms are full of flavour and meaty enough to take a good grilling. For a barbecue, top with cheese, pickles or salad, then just veg out in the sunshine.
Instructions

1. Wipe the mushrooms clean and place in a freezer bag with the olive oil, chilli, garlic, lemon juice and seasoning.
2. Secure the bag, then turn the bag several times to coat the mushrooms evenly, then leave to one side for 30 minutes.
3. Cook over a hot barbecue, or under a hot grill, turning until piping hot and cooked through. Pile into burger buns along with your favourite accompaniments.

* 250g Portabellini Mushrooms
* 2 tbsp Olive Oil
* 1 Red Chilli, deseeded and chopped
* 1 clove Garlic, crushed
* 1 tbsp Lemon Juice
* 4 Burger Buns
* 4 Tomatoes
* 4 handfuls Salad

Pefect Wine For Father's Day

Unsure what to get your father for Father’s Day? Frost has done the (ahem) hard work and tested a collection of wine that would make a great Father’s Day present. If you’re feeling generous, buy a few….

– Nottage Hill Pinot Noir: A fruity, refreshing wine. It’s quite sweet and really takes the edge off a hard day! Sweet flavours of cherry and strawberry with hints of mint and fennel are complemented by spicy notes and sweet cigar box oak characters. Perfect with an oriental menu or thoroughly enjoyable with roast duck. RRP £6.73.

– Kumala Cabernet Shiraz: Perfect if your father likes chocolate. It’s a good, rich wine.and tastes good with red meat. A rich nuttiness follows through on the palette, with a lingering aftertaste with a touch of chocolate. The wine will make a perfect partner to fillet steaks, lamb chops and hearty stews. RRP£6.79.

– Kumala Sauvignon Blanc: A refreshing white wine that is citrus and tropical fruit flavors with very aromatic notes of green chilies, herbs, asparagus and gooseberries. It really hits the spot. A light-bodied, dry wine with hints of gooseberry and lime on the nose. Floral, crisp, pungent fruit on the palate with good concentration and length. Perfect with meats and seafood. RRP£6.79.

– Fish Hoek Sauvignon Blanc: Some wines taste too acidic. This one doesn’t – with no bad aftertaste. One of my favorites. Attractive New World mouth-filling style. Tropical fruit salad spiked with a sweet and sour twist of lime mingles with a good green fig and nettle intensity. On the palate, there are hints of gooseberry, a nice acidity and a lovely lingering aftertaste – made for easy quaffing. This is a wine that can be sipped, but will also lend itself beautifully to seafood, light poultry dishes and salads. RRP£6.99.
