Wine for Winter Nights 

It’s officially Winter and almost the countdown to Christmas (eeeek) so here at Frost we decided to toast away what has been a glorious Summer and a mild Autumn with some beaut wine offerings.

For our White Wine lovers we have gone for;

Villa Maria Sauvignon Blanc Private Bin

Villa Maria has long been a hit with consumers and New Zealand Sauvignon Blanc has continued to dazzle customers for a number of years now. As the most widely planted grape variety in NZ, Villa Maria have a few distinct Sauvignon Blanc styles dependent on regions of the country owing to the maritime climate. Here we try the Malborough Private Bin which features grapes picked from a combination of vineyards across two different valleys in Malborough. The result is an intense and herbaceous flavour noticeably distinguishable from Villa Maria Reserve Malborough wine which has grapes specifically from Wairau valley. Private Bin has a strong and fresh flavour alive with citrus and tropical fruits owing to the long sunny days and cooler nights. 

This is a flavoursome wine and can be enjoyed without food but with owing to its strong flavour, a glass with dinner will go down well. We paired it with Chicken and Mushroom risotto.

For a hearty RED recommendation we chose; 

Errazuriz Estate Series Carmenere 2017

This Chilean number is robust and pleasing owing to it being 90% Carmenere. The aromas are evocative of a classic wintery red with hints of black pepper, oak and nutmeg. A perfect fireplace wine. The balance of smoke and spice is the stand out essence which distinguishes this Carmenere variety, and ever so subtly sets it apart from the Merlot. The dash of Petit Syrah which makes up the other 10% adds to the aromatics of the wine.

Smooth tannins make this highly desirable on the palette with and without food and I would certainly recommend with rich dishes sweet and savoury due to the chocolatey nature of this wine.

Villa Maria Reserve Wairau Valley Sauvignon Blanc 2014 Review

Grapes Sauvignon Blanc

This wine is fruity and fresh. Savoury with the perfect balance of acidity: this wine is the perfect wine to bring in the New Year. Ripe fruit characters, intense aromas of passion fruit, grapefruit and blackcurrant with a subtle underlying of gooseberry on the nose. The palate is concentrated with tropical flavours and it has a long finish. Delicious. 

 

Winemaker Notes

A classic Wairau Valley style bursting with the trademark ripe fruit characters found in this sub region. The nose displays pure and powerful aromas of peach, grapefruit, blackcurrant, and underlying fresh aromatic herbs like rosemary and lemon thyme. The palate is concentrated with an enticing array of gooseberry, melon and guava flavours, balanced by a fine thread of acidity, and a savoury refreshing finish.

Vineyards

The fruit for this wine comes from a combination of vineyards with varying soils and viticultural techniques throughout the Wairau Valley. The common thread between the vineyards was an unrelenting focus on vine health. This was achieved by careful yield adjustments and water management as well as a balanced approach to vine nutrition

Winemaking

All Sauvignon Blanc grapes were harvested at the cool of night to retain aromatics and freshness in the grapes. The fruit was destemmed, crushed, and pressed before cold settling. The clear racked juice was inoculated with selected aromatic yeast strains. Cool, slow fermentation in stainless steel tanks took place to retain distinctive sub-regional and varietal characteristics

Vintage

The climate in Marlborough has high sunshine hours, but temperatures during the growing season are regulated by the cooling ocean influence. In 2014, Marlborough had warmer than usual spring, followed by temperate summer. Overall, it was a bountiful harvest with excellent quality grapes; intensely flavoured and picked in pristine condition. All Sauvignon Blanc grapes were harvested between early March until mid April.

The Young Airhawk | Wine Review

The Young Airhawk 2011 pack shot (LR)The Young Airhawk is a very interesting wine. In fact it is different from most other wines I have tried. It is a dry wine. Very much so. It also makes you want more. It tastes expensive, fresh and crisp. It also has a running taste of oak, but not too much.

I loved how fruity it was. It has a great, notable taste of peach, some lemon tones, green fig and a unique taste of asparagus. Which I don’t think I have ever tried in a wine before. This is a great wine full of a lot of great different flavours. A unique mix that really works. Fans of dry wine will especially love it.

Although this wine is priced at £14.99 from Morrisons I do think it is worth it. It tastes much more expensive.

The Young Airhawk – This wine is made entirely from barrel-fermented Sauvignon Blanc. Bouquet: Layer of green figs, asparagus and minerality, very well integrated with wood. Fresh, crisp and zesty with creamy texture.

The Young Airhawk, a fresh, crisp and zesty wine with a creamy texture made entirely from barrel-fermented Sauvignon Blanc, pays tribute to Nederburg founder Johann Graue’s son, Arnold. Arnold Graue loved speed, action and adventure and showed his bravery from an early age by signing on as a trainee air gunner with the South African Air Force.

Like his father, Arnold was renowned for his winemaking prowess, winning many wine prizes, but sadly after hiring a light aircraft to celebrate a perfect spring day his life was tragically cut short in a fatal collision with another aircraft. The Young Airhawk Wooded Sauvignon Blanc captures the spirit of this professionally driven young man with a huge appetite for life.

Stowells Light Wine Review

Light wines are big business, and one that is growing by 83% year on year, and in dark, cold January anything that has low calories and a reasonable price is a must to see you through the month.

Stowells light Wine is 60 calories per glass, 30 per cent less than a standard glass of wine. They also have less than one unit of alcohol per 125ml serving.

Stowells Light White .This wine is made from a blend of Chardonnay and Sauvignon Blanc. It has tastes of melon, pear and apricot fruit flavours.

What I thought

I am incredibly fussy about white wine. I think some white wine tastes like battery acid, not this though. It doesn’t taste acidic, it tastes fruity, refreshing and clean. It doesn’t taste low-calorie or low-alcohol. Most importantly, it doesn’t taste cheap. This is a very good wine. I would buy this and even take it to dinner parties. It’s got an incredibly good blend of everything a white wine should be. It takes the edge of the day, and is a much healthier option.

These wines contain less calories than a packet of Malteasers.

Stowells Light Rose

A vibrant youthful pink, strawberry, raspberry and cherry fruit flavours.

What I thought

I love Rose. I have tried most of the ones on the market. When I am out I usually order Rose because I am very fussy about white wine (see above). I also have a sweet tooth and love fruity things. This Rose isn’t too sweet, a common complaint from people who are not as mad on Rose. It’s fruity and fresh. It doesn’t taste low calorie or low alcohol either. It also doesn’t taste like a dessert wine (something that a low alcohol rose is at risk from) It is a good rose for fans of rose and those who enjoy it occasionally.

Sophie Mitchell Summer Recipes; Tweet yourself thin: Friday

Pancetta, cherry tomato and ricotta frittatas
Prep time 10 minutes
Cooking time 10 minutes
Makes 12 mini frittatas
12 slices of pancetta
6 cherry tomatoes
200g ricotta
25g watercress
10 eggs
100ml milk
Sea salt and black pepper
1. Preheat the oven to 200C/400F/Gas 6. Oil a 12 cup mini muffin tray or a 6 cup larger one.
2. Line each muffin cup with a slice of pancetta. Then halve the cherry tomatoes and add one half to
each cup. Divide the ricotta between the cups as well.
3. Whisk the eggs and milk together, then season. Roughly chop the watercress and mix in with the
eggs. Pour the mix between the muffin cup and pop in the oven 10 minutes, until just set.
4. Then cool slightly, remove from the tray and serve.

Wholemeal linguine with crab, chilli and white wine
Serves 4
Prep time 10 minutes
Cooking time 20 minutes
400g wholemeal linguine
2 tbsp extra virgin olive oil
4 cloves of garlic, roughly chopped
1 dried chilli
2 lemon, zest and juice
Small handful of chopped flat leaf parsley
400g of white crab meat
1. Place a large pan of water on to boil, when at a rapid boil, add salt and then the pasta.
2. While the pasta is cooking, heat the oil up in a large frying pan. Add the garlic, then crumble in the
chilli, fry for a couple of minutes, but do not get any colour on the garlic.
3. Add the crab, lemon and parsley then season well.
4. When the pasta is done (this should take about 20 minutes, but read the individual packet
instructions and cook al’dente) Then drain off the pasta, retaining about 1 tsbp of pasta water and
add both to the frying pan. Cook for another 5 minutes and then serve with an extra drizzle of
olive oil.

Pan Fried Salmon with fennel shavings and saffron aioli
Serves 4
Prep time 15 minutes
Cooking time 10 minutes
4 skinless salmon steaks (about 200g each)
2 bulbs of fennel
1 tbsp capers
1 red onion, sliced
Juice of lemon
2 tsp olive oil
Saffron aioli;
1 clove of garlic
Juice of 1 lemon
1 free range egg yolk
1 pinch of saffron
100ml olive oil
1. Firstly trim the fennel and then cut it as thinly as possible (I use a mandolin for this) then mix with
the lemon juice, capers and onions finally add the olive oil and season. Do this about 1 hour
beforehand if possible.
2. Then make the aioli, place the garlic in a blender with the egg yolk and saffron, then blitz for 2
minutes. Then very gradually pour the olive oil, while the machine is still on. It should become pale
and thicker. Season and add some lemon juice.
3. Heat griddle pan or a frying pan up hot and then add a little oil, season the salmon and cook for
about 4 minutes each side then serve up with the salad and a drizzle of aioli.
