Kelly’s of Cornwall Banoffee Pie Ice CreamIngredients:

100g butter, melted

200g digestive biscuits

4 bananas

Kelly’s of Cornwall Clotted Cream ice cream or Kelly’s Cornish Dairy Vanilla ice cream

Jaffa Cake mini rolls

Kelly’s of Cornwall Clotted Cream and Honeycomb ice cream

 

 

 

Method:

  1. Line a cake tin with cling film.
  2. Bash the biscuits to make crumbs and mix with the melted butter.
  3. Push the crumb mixture into the cake tin to make a base.
  4. Chop the bananas into slices and use to cover the biscuit base.
  5. Cover the bananas with a layer of Kelly’s of Cornwall Clotted Cream Vanilla ice cream.
  6. Chop the Jaffa Cake rolls into slices and cover the ice cream.
  7. Finish off with a layer of Kelly’s Clotted Cream and Honeycomb ice cream.
  8. Place the tin in the freezer for a couple of hours and then serve.

The Benefits of a Vegan Pregnancy

vegan pregnancyAll essential vitamins and minerals can easily be found in a wide variety of vegan foods, including green leafy vegetables, nuts, seeds, lentils, pulses, beans, soy, whole grains and flax. So there is no need to worry about how to get enough protein, calcium, iron, omega-3 fatty acids or vitamin D. The only exception is vitamin B12, which can be easily supplemented.

Actors Alicia Silverstone and Emily Deschanel have both had vegan pregnancies. Alicia says, “All of the vegan pregnancies I have witnessed have been way smoother than those of my non-vegan friends. … From my point of view, the more vegan you are, the more healthy you are and that makes your pregnancy go more easily and helps your baby to be super duper healthy!”

 

 

  1. Ward off morning sickness: Morning sickness is one of the least fun aspects of pregnancy, and interestingly enough, a vegan diet during pregnancy may alleviate some of those symptoms. Some studies have connected a diet high in meat and dairy with more severe symptoms of morning sickness. The science is this: Morning sickness is the body’s natural attempt to protect the fetus from unhealthy substances, physically clearing those substances (and the food that contains them) out of the mother’s body. Many of the chemicals that are cleared out most commonly come from meat and dairy products, because these products are at a higher risk for contamination. Thus, eating a vegan diet (ideally organic) may reduce or totally eliminate the symptoms of morning sickness. Unlike meat and dairy product, plants can help to rid the body of toxins, ultimately providing the fetus with lower amounts of unhealthy chemicals that we consume in our food.
    In addition, a vegan diet ensures that the mother is not consuming the foods that are commonly known to be harmful for fetuses, including fish and seafood, deli meats, and unpasteurized dairy products. Each of these can put a fetus at risk for birth defects, and eating a vegan diet guarantees that none will be an issue.

 

  1. A healthier, happier you: A vegan diet is great for your health! According to the Academy of Nutrition and Dietetics, vegans are less likely to develop heart diseasecancerdiabetes, or high blood pressure than meat-eaters are. Vegans get all the nutrients that they need to be healthy, such as plant protein, fiber, and minerals, without all the nasty stuff in meat that slows you down and makes you sick, such as cholesterol and saturated animal fat.

 

  1. It’s the best way to help animals: Every vegan saves the lives of countless animals each year. There is simply no easier way to help animals and prevent suffering than by choosing vegan foods over meateggs, and dairy products.

There was no doubt in my mind that a vegan pregnancy was what was best for me and, more importantly, my precious bundle.

 

Apart from my initial morning sickness, I thoroughly enjoyed my pregnancy. I’ve never felt better inside and out.

 

For any food that I craved, there was a vegan alternative, so I never felt that I was missing out. I always made sure that I had my favourite foods in the house if I had a craving. I ate very well.

 

While some of my pregnant friends suffered with low iron levels and high blood pressure, my iron levels were high and my blood pressure was fantastic throughout.

 

I’m a dancer and continued to perform at shows and dance throughout my pregnancy. I had so much energy. I was dancing four days before I gave birth.

 

Hadley was a healthy 7 lbs, 11 ozs when he was born. Now at 15 months, he continues to thrive on a healthy, varied and colourful vegan diet. He’s a happy, healthy, beautiful little boy.

And For Breakfast: Lizi’s Granola & Nature’s Path Gluten Free Porridge Review

It is the most important meal of the day and without it I get rather grumpy. So with that in mind I reviewed some breakfast options.

First up is Lizi’s Granola.

The press release calls it ‘the UK’s healthiest and most tasty breakfast cereal’. Lizi’s Granola is not new but has a new low sugar variant. It has less than 4% sugar. Impressive and definitely a plus with the amount of bad press sugar gets now. It is just not good for you. When I first tasted this granola I wasn’t sure if I liked it but as I finished I did. It is tasty and has just a touch of sweetness. It is nutty and oaty and also makes you feel healthy. It is high in fibre and all of the ingredients are natural. It is really good granola with less sweetness. You could also add more sweetness by adding fruit or yoghurt. Tasty and healthy.

Nature’s Path Gluten Free Hot And Steamy Porridge Oats have the advantage of not having that other things people hate at the moment: gluten. The box has three flavours: original, spiced apple and maple. They are convenient, you can put them in the microwave after adding water, or just add some milk or water and cook for two minutes on the hob. They are high in fibre, suitable for vegans, kosher and made with natural, organic ingredients. But how do they taste? Amazing. High quality, even with water instead of milk and keeps you full until lunchtime. They are far too healthy to taste so good. Available from Waitrose, Ocado, eBay and Amazon.

Steitz Spätburgunder 2011 & Steitz Weisser Burgunder Trocken Achat 2012 Wine Review

Some wine just has something special about it and this is obvious straight away. I am not talking about the packaging of the Steitz Weisser Burgunder Trocken Achat 2012 and the Steitz Spätburgunder 2011 although that is also sleek and beautiful. The bottles are long and thin: very classy. No, the actual contents are special.

Let’s start with the Steitz Spätburgunder 2011. It got the Decanter Silver Award 2014. It is pricey at £22 but is it worth the price? This is otherwise known as a Pinot Noir, it is high quality and it is concentrated and has spicy notes of cherry, wild raspberry, cardamom, cinnamon and violet. It has a full and smokey flavour. It has been barrel aged for 26 months which also gives it a delicious vanilla flavour. It is a very good wine indeed. Worth the price.

Enjoy with: lamb, duck and guinea fowl.

Next up is the Steitz Weisser Burgunder Trocken Achat 2012. Otherwise known as a Pinot Blanc, full or aromas of roasted almonds, quince, pear and vanilla. This is a truly wonderful wine. Cheaper then the Steitz Spätburgunder 2011 at £15 but still as good. It won the Decanter Commended Award 2014. A well deserved win.

Enjoy with: cheese, asparagus and seafood. Serve at 10°C.

Jean-Luc Colombo Special Wine Review

Jean-Luc Colombo is a relatively young company by French wine standards. With family origins in Marseille, Jean-Luc moved in 1982, with his wife Anne, to Cornas in the heart of the Rhône Valley, to set up a pharmacy and oenology lab. Four years later he bought his first vineyard – Les Ruchets – and celebrated his first vintage in 1987. His business went from strength-to strength and in 1993 Anne and Jean-Luc sold their pharmacy to focus on the wine business, investing in more vineyards and a house on the Cornas hillsides, as well as working as a negociant in this famous region.

Today, as well as owning vineyards in Cornas, they are pioneering vineyard development in the stunning ‘Blue Coast’ area and have their own winery, offices, bottling line and oenology laboratory in the centre of Cornas. They are renowned for their great wines from the northern & southern Rhône and the Mediterranean region, and export to over fifty countries.

Jean-Luc Colombo 2013 Les Abeilles De Colombo Côtes Du Rhône

This is dry and quite smooth. It is fruity and light straw in colour. It is intensely floral with herbal and mineral notes, along with a floral aroma of peach and melon. It is well balanced and complex. It is crisp with flavours of citrus and pear. Delicious.

Enjoy with grilled lamb, pork and assorted cheeses.

2013 Les Girelles Picpoul De Pinet

This wine is rich and subtle. Crisp and dry and beautifully lemon scented. It has fresh notes of white flowers. It is very well rounded wine. It is also fresh.

Enjoy With: Grilled and roasted white meats, fish/shelfish, salads and picnics, mild creamy cheeses and oriental food.

2012 Les Abeilles De Colombo Côtes Du Rhône

This light straw coloured wine is fruity and floral. Light, crisp and clean: it is well-balanced and complex. Very good wine.

Biju Bubble Tea Review

So what is Bubble Tea and how is it different for to your normal tea? Bubble tea has been around since the 1980s and it is already quite big in many Asian countries, but recently it has become a global phenomenon. The tea is shaken to produce bubbles and is served with an edible topping, but as we soon learned, that doesn’t really cover it.

Biju is a new bubble tea room in Soho. Founder Nick invited us to to try some of his creations. Nick had gone out to Asia and had worked in a bubble tea room before he set up Biju.

Unlike most other bubble tea rooms, ‘who are in it for a quick buck’, Nick’s painstaking research and his passion ensures he has done things properly. Biju uses fresh organic milk in its tea, unlike most of its competitors who use powder. Nick and his team go to incredible effort to make every tea fresh and have made a significant investment in equipment. Many of the ingredients and jellies are made daily.This makes an incredible difference to the taste as we discovered.

Honeydew milk and sweet egg pudding

We start with the Honeydew melon with egg caramel pudding, a fruity milk. The honeydew melon was truly delicious and very refreshing and the sweet egg caramel was a delight.

Next up was a Jasmine Green milk tea with classic tapioca pearls, the original bubble tea ingredient. The classic pearls are balls of starch. Their texture is extremely satisfying to chew as you suck them up through your straw with your tea. The whole thing was delicious and totally different to our first tea.

We then tried a passion fruit iced tea with basil seeds, another unique and satisfying topping. It was the perfect thing for a summer day. It was delicious and I could drink it every day. We also tried a chocolate with tapioca pearls as seen above. In fact we ended up trying all sorts of different teas.

We were extremely impressed with our first experience of Bubble tea at Biju. The variety of the different teas was amazing. The tea was also so fresh and real. You could really taste the high quality ingredients. If there were a Biju next to me I would be in there every day and who knows? I wouldn’t be surprised if there was someday. I don’t think this is a short term trend. If your in the area make sure you try one because it is a new experience and if you don’t you will be missing out. Ask for help if your not sure what to choose, Nick or his staff are always keen to help. Make sure you go to Biju if you want a proper experience.

Villa Maria Private Bin Sauvignon Blanc 2014 Wine Review

This sauvignon blanc is one of the best we have tasted. It is dry and fruity. It is also smooth, refreshing and ripe. With gooseberry and characters of tropical fruit. It is vibrant with nuances of melon, fresh lime, the previously mentioned gooseberry and passionfruit.

We are very partial to New Zealand brand Villa Maria. They make some good wines and this medium-priced sauvignon blanc is one of them. Very drinkable and wonderful for if we ever have a summer again.

Enjoy with: fish/shellfish, salads & picnics, mild creamy cheeses and grilled seasonal vegetables and seafood.

Summer Drinks Review

We got sent some summer drinks to review from Sainsbury’s: two cordials, Spanish pink grapefruits and guava purée, Ginger & Lime and a sparkling cocktail: Elderflower, Mint & Lime Blended Sparkling Cocktail. Let’s break them down.

Taste The Difference Grapefruit & Pink Guava, made with Spanish pink grapefruits and guava purée.

Absolutely delicious, summery and refreshing. The pink grapefruit mixed with the guava tastes great and really works. This is a perfect summer drink.

Taste The Difference Mexican Lime  & Ginger Cordial.

This is also excellent. It tastes very fresh and the two ingredients really work together. Quite addictive too.

Elderflower, Mint & Lime Blended Sparkling Cocktail.

This yummy cocktail is only 4% volume so you can enjoy it without worrying about hangovers or those awful headaches some people get when they drink in the sun. This cocktail is white wine mixed with elderflower, mint and lime. It is zesty, fresh and refreshing: a perfect summer cocktail. Recommended.

To celebrate the launch of two brand new seasonal Taste the Difference cordials, Sainsbury’s has created three delicious punch recipes for sharing with friends and family while entertaining this summer. The new cordial flavours; Grapefruit & Pink Guava, made with Spanish pink grapefruits and guava purée; and Ginger & Lime, made with Mexican limes, add to the existing range featuring Taste the Difference Elderflower Cordial. These cocktails have been especially designed as long drinks for pitcher measures to be easy to make and refreshing on a hot (or overcast) British Summer’s day.

• Add 120ml Taste the Difference Elderflower Cordial
• Top up with fizzy water
• Finish with the juice of two lemons and garnish with slices of lemon

And finally, Shoot the Breeze, a delicious Rum, ginger and lime punch. Aromatic and spicy, this cocktail will really help to get the party started:

To make:
• Pour 180ml Sainsbury’s Superior White Rum into a jug
• Add 120ml Taste the Difference Mexican Lime & Ginger Cordial
• Top up with ginger ale
• Finish with the juice of two limes and garnish with slices of lime
