Easy Ways To Cook Vegetables. How to Get Your 5-a-Day.

Getting our 5-a-day is hard. Or at least, I have often found it so. It is easy to grab a piece of fruit but eating vegetables requires more effort. At least that is what it feels like sometimes. Since lockdown it has been harder to get some foods. We have had a weekly delivery of fruit and veg. There are a number of companies that do this.

It has set a challenge to use everything up as I refuse to have food waste. This has always been the case but even more so now. I will be sharing tips on the coming weeks but here is what I am doing at the moment.

Every few days I make a a huge salad or a traybake of roasted vegetables. This does as a lunch for a few days and also a side for supper. It is very easy to do. Sure there is a lot of chopping, and my children are usually trying to get my attention, but because you only have to do it every three days it is not that bad.

Salad potatoes can be boiled for 15 minutes. I add rosemary or parsley to them.
potatoes with herbs, cooking vegetables, how to cook potatoes,

Cauliflower can be boiled in 15 minutes. Carrots take 5 minutes. I add as many herbs and spices to the various vegetables as possible. A lot of  fruit and veg boxes come with a bag of fresh herbs. You might also have some in your cupboard. Five spice anyone?

Aubergine can be roasted for 20 minutes in the oven. I tend to add olive oil and salt and pepper. It tastes delicious. You can also pan fry it. Beetroot is great baked in the oven for 45 minutes. You can even bake it whole. Add olive oil and wrap in foil. I tend to cook things at 180. The roast vegetables can be added to the salad and vice versa. I love adding fruit to veg. Oranges go great with aubergine. It is a lot of work cooking and, lets be honest, tedious, but when you make a lot you only have to do it every three days. That is for a family of four.

Eating raw food is great and retains nutrients. I find raw cabbage tastes amazing and has a satisfying texture. I have a large Mason Cash baking bowl which I make a huge salad in. There was one week where we did not get a fruit and veg box and my husband and I really noticed the difference to our health. A plant based diet is the easiest way to great health.

In the evenings and weekends I write in the kitchen while my husband looks after the kids. I am right near the fridge which is not good, but instead of snacking on unhealthy foods I just dip into my huge bowl of salad. Try it, put all of your favourite fruit and veg in a big bowl and pick at it when you are hungry. It will change your life and your health.

Please share any cooking tips or recipes with me. Lots of love and stay safe, Catherine xx.

Michael Caines Roast Pork Loin With Cider Sauce & Gratin Dauphinois Potatoes

pork recipe

Prep time; 2 hours 30 minutes

Serves 4

Ingredients

1.5 kg loin of pork

Sea salt

Ground white pepper

1-2 tblsp groundnut oil

Cider sauce

20ml groundnut oil

1kg pork bones (ask your butcher), chopped small

1 large onion, peeled and chopped

1 large carrot, peeled and chopped

1 Leek chopped

1 celery stick, chopped

2 garlic cloves, peeled and crushed

1 bay leaf

2 thyme sprigs

2 sage sprigs

1 tblsp Plain flour

1 granny smith apple, chopped

300ml dry cider

400ml chicken stock

1 tblsp Dark Soy sauce

Gratin Dauphinois potatoes

Equipment: Pyrex dish 290 x 200cm

Ingredients:

300ml milk

200g whipping cream

3 garlic cloves lightly crushed

1 bay leaf

5g salt

2g white pepper

20g unsalted butter softened

1 kg Désirée, Maris Piper or King Edward potatoes

Method

Preheat oven to 200°C/ Gas Mark 6. Season the pork loin generously with salt, rubbing it in well to encourage a crispy crackling, then season with pepper. Place a roasting tray or large ovenproof pan over a high heat, add the groundnut oil and heat to almost smoking point. Add the pork loin and turn to seal all over. Now place in the 500gr of the pork bones into the oven tray and put the loin on top. Transfer to the oven and roast for 1 ½ hours or until cooked through.

In the meantime, prepare the cider sauce. Place a heavy-based pan over a medium-high heat and heat up, add the oil. Heat well before you add the pork bones and colour until golden brown stirring frequently.

Add the vegetables, garlic and herbs, lower the heat and cook or 8-10 minutes or until softened and golden, now add the plain flour and cook for 2 minutes. Add the chopped apple and cider. Bring to the boil and reduce by half before adding the stock and soya sauce. Bring back to the boil, skim and simmer again for 45minutes.

Pass the sauce through a fine sieve into a clean pan and simmer to reduce by at

least half, to thicken and concentrate the flavour.  Keep warm.

Gratin dauphinoise potatoes,

Pre heat your oven to 170°C / Gas Mark 3. Place the cream, milk, garlic, thyme, bay leaf, salt and pepper in a large saucepan and bring to the boil. Remove from heat and leave to stand for 10 minutes before using.

Take a piece of garlic and rub the Pyrex dish well with it, and then rub the dish with the softened butter.

Peel and slice the potatoes thinly using a mandolin and layer them into the dish, overlapping the slices evenly layer by layer. Finish off the top with a neat uniformed layer, now pass off the liquid over the top of the potatoes and down through the layers. Make sure that the potatoes on top are covered lightly with the cooking stock before placing them into the oven on a tray. After 10 minutes take a spatula and press down to ensure that potatoes remain covered.

Cook for 45 minutes to an hour then check to see if nicely coloured and continue to cook until the potatoes are soft.  Leave to stand for 5 minutes before serving.

Remove the pork from the oven, transfer to a warmed platter and rest in warm place for 10 minutes. Pour off the fat from the roasting pan, and then add the meat juices to the sauce. Carve the pork, first removing the crackling in one piece to make it easier to do so.

Arrange the pork slices on warmed serving plates. Add a portion of crackling and a large spoonful of gratin dauphinoise. Enjoy!

The Crown & Anchor Restaurant Review

Chiswick High Street is quite a bustling, yet tranquil part of West London. It is green and full of environmentally conscious people and yummy mummies. We headed to the newly refurbished Crown & Anchor to review it.

anchorandhopewine unnamedprosecco anchorandhopesalad anchorandhopeterrain anchorandhopeThe Decor looks great and there is a good atmosphere. It is a sunny day and the flowers on the table all add to a lovely vibe. We start with the Pork, Apple and Leek Terrine With Piccalilli and Baby Toffee Apple & Toast and Watercress, Tarragon, Mint & Purple Carrot Salad With Roasted Pistachios, Sunflower Seeds & Orange Blossom Dressing. The terrine is delicious, very well done and all of the ingredients work well together. The salad is interesting and too tasty for something so green, but could of done with a little something else, more colour perhaps, or more dressing. It was a popular dish, the manager, Gordon, told me, and it was delicious. I just thought it could do with a little kick of something.

We also had a good bottle of prosecco. Perfect for summer.

There is a lot to say about our mains, mostly because they were so huge and generous that we really didn’t need a starter or a dessert. In fact, it took us ages to finish them and we still didn’t actually manage to polish the plate off.

We had the Cider & Tarragon Battered Cod With Mushy Peas & Tartare Sauce With Double-Cooked Chips and the Half Roast Chicken With Bread Sauce. The cod is well-battered with a good twist thanks to the tarragon and cider, the mushy peas are great and have some mint in them, the chips are double-cooked and there is also a good tartare sauce. The chicken is huge, an actual half chicken. No stinginess here. The bread sauce is very good, as is the gravy. It comes with a huge Yorkshire pudding, carrots, broccoli, parsnips and roast potatoes. This is a meal and a half, and you certainly get a lot for your money. It tastes good too.

All the way through our meal the service was amazing but seemed to completely drop off when we were ready to order dessert. It took a while to catch a waiters eye and order something. To be fair, they probably got sick of waiting for us to finish. My colleague and I hate wasted food but gave up towards the end.

anchorandhopedessert anchorandhopetartFor dessert (yes, our legs are hollow) we had an Earl Grey Infused Tart With Creme Fraiche and a Chocolate and Pear Tart With Creme Fraiche. Both were great and came with a biscuit and another sauce that really complimented the other ingredients. Very good desserts. I loved my chocolate and pear one. The combination of flavours really worked.

We enjoyed our meal at The Crown & Anchor. They also have a newly refurbished upstairs bar and more seating. It is a gorgeous, friendly pub with good food.
