Leek And Lentil Hotpot Recipe | Vegetarian Food

My husband has stopped eating meat, which means I have had to develop something of an imagination when it comes to cooking. I came up with this dish after being inspired by a lentil and tomato dish I had at an Italian restaurant in Putney called The Italian Boys. This is completely different, but I was greatly inspired by the combination of tomato sauce and lentils. So here is my take on it.

I have called it a hotpot after my husband suggested it. It tastes amazing, if I do say so myself.

Cooking time: 30-40 minutes

Leek And Lentil Hotpot Recipe

You will need:

3-4 Leeks.

A tin of chopped tomatoes.

Lentils (150-200g)

3 carrots

A tablespoon of olive oil

A dollop of butter

La Rosmarina sauce. (We get ours from Fattoria La Villa but you can buy it from somewhere else or make your own. The ingredients are tomatoes, extra virgin oil, fresh rosemary, garlic, salt and hot chilli pepper. Only use a tiny amount of the hot chilli pepper, you want a slight kick, this is not a spicy dish).

Method

Thoroughly clean the lentils and then add them to a pan. Pour cold water over them and then bring to the boil. Cook for 20-30 minutes. Next clean and chop the leeks and the carrots. Then take a frying pan and add a dollop of butter or spread. Add the leeks and the carrots and sauté them for 10 minutes. Add a tablespoon of olive oil. When the leeks and carrots are cooked add the lentils and then the rosemary sauce. Finally, add the tin of tomatoes. Stir it all together and make sure it is all hot. Job done: Leek & Lentil Hotpot. It is quick and easy.

If you can’t get your hands on some La Rosmarina sauce, although I recommend that you do, add some fresh rosemary, a clove of garlic, a touch of salt and a very slight amount of hot chilli pepper to the dish. The hot chilli pepper can be taken out altogether if you do not want any spice, or add a little more if you are so inclined.

Cauliflower and Leek Soup Recipe

This Cauliflower and Leek Soup Recipe is a great vegetarian soup. Lower in calories than the classic potato and leek soup. It is a good alternative and tastes delicious.

You will need:

3 leeks

40g of butter

1  cauliflower

2 tablespoons olive oil

3 cloves garlic, finely chopped

2L stock of your choice. I use vegetable sometimes but not always.

salt and  pepper to taste

How to make it:

Heat the olive oil and butter in a large pan. Use a medium heat. Saute the leeks, the cauliflower and the garlic for roughly 10 minutes. Stir in the stock and then bring to the boil. Reduce the heat, cover and allow the mixture to simmer for 45 minutes.

After 45 minutes remove the soup from the heat. You can then blend with a mixer if you want it to be smooth. I don’t, I like my soup chunky. Add a good dollop of butter or double cream if you want. It is optional but I add more butter. It really adds to the taste. Add salt and pepper to taste too. Done! Simple and delicious.

Many of us whose waistline is on an expansion mission know there are simple solutions to rein in weight gain. Why is it important to stay healthy?

 

Eating properly and having the right amount of exercise are key to your ability to fight off illness and disease.  The immune system needs the right amount of nutrients to remain strong in order to work efficiently, but it is also hampered when you are overweight and out of shape.  Additional factors to consider if you want to improve your health include the damaging effects of smoking and alcohol consumption.  Both of these can lead to illness and also reduce the effectiveness of your immune system.

 

A healthy diet

 

Following a healthy diet will mean that you are providing your body with all the nutrients that you need to stay in good health.  With plenty of fruit and vegetables in your diet it will be much easier to get the right nutrients.  The recommended daily amount is around five portions a day, but some scientists are now recommending that people extend this to seven portions a day, with just two of those as fruit.  However, if you are one of those people who rarely eats fresh fruit and vegetables, the first step is to include just some each day.  Over time, you can build this up to the right amount.

 

In addition to fresh fruit and vegetables, it is a good idea to make a few swaps so that your unhealthy choices are suddenly much better for you.  One example is fries.  Replace these with jacket or boiled potatoes and you will cut your fat intake dramatically.  White bread can be swapped for wholegrain and you can opt for brown versions of rice and pasta instead of the standard white.

 

For some it can be difficult to get the balance right, particularly if there are underlying health issues.  Herbal and nutritional supplements can be useful here.  A good multivitamin can help to redress the balance, but you can also incorporate herbal teas as an easy way to add the benefits of herbs to your diet.  Jasmine Tea, for example, is considered to be very calming and perfect for those who suffer from stress and anxiety, both of which can have a negative effect on health.

 

Don’t forget exercise!

 

Finally, make sure that you get regular exercise.  The jury is still out on just how much exercise a person needs but the good news is that you only have to go for a good walk a few times a week to see a difference.  Exercise does not have to be hard work or boring – take up cycling with the family or even try something like ballroom dancing.  You will be having so much fun you might not even notice the pounds and inches slipping away!

We were pretty happy when Spicy Ginger Crunch Cookies and Lemon Butter Shortbread from Kent & Fraser arrived hot on the heels of Cocio Chocolate Milk.

cociochocolatemilkRight, let’s start with the chocolate. Cocio is the new chocolate milk from Aria. This Danish chocolate milk has only three ingredients: fresh milk, luxury cocoa and natural sugar. It is best served ice cold and drunk straight from the bottle after giving it a gentle shake to mix the three ingredients. For those watching their waistlines there is Cocio One which only has 1% fat and 1% added sugar. It’s only 130kcal per bottle and is as delicious as the classic.  We love Cocio chocolate milk and would buy it. It goes on sale this month nationwide priced at £1.39 for 270ml.

glutenfreebiscuitsThese were amazing. They are gluten and wheat free but are just as delicious as ‘ordinary’ biscuits. The lemon butter shortbread is light and zingy. The amount of lemon is perfect and they are very moreish. They melt in your mouth. The spicy ginger crunch cookies are superb. Not too spicy that they are not enjoyably, just a good kick which is not uncomfortably hot. They are crunchy and delicious. We polished both packets off worryingly quickly. These biscuits taste too good to be natural, but they are, so even better.

We were pretty delighted to review Pudology Banoffee Pie and CHI Natural Chocolate Coconut Milk. Our first thoughts about Pudology was just what an amazing name it was. The design is great too but none of that is as important as the taste. So how was it? Well, before we get to that let me just tell you that the puds are dairy and gluten-free. Because of this we thought maybe it wouldn’t taste as good. How wrong we were. They are amazing. Absolutely delicious. We are converted. Available from Sainsbury’s and Waitrose.

Healthy Pepper And Tomato Soup

Hey Guys

So the cold nights are still here. So here’s something hot, sexy and simple……NO not me.

But my red bell pepper and tomato soup that only takes a few easy steps to follow.

This will warm even the coldest of hearts and the bits bits are not only is it simple to make but you can even add to it.

But here it is Below

2 large red bell peppers, 5-7 tomatoes, 1 large red onion, 5 garlic cloves, salt & pepper in a over try with coconut oil.

Roast for between 30-40 mins or until soft and slightly charred.

500 mils of stock

all added in to a blender and go for it but then you can add anything you want like

You can also add into the mix chilli, ginger, cream, a bit of dark chocolate….anything you like. I even had mine with a home made chicken wrap.
