Meet Gillian Holmes – literary editor By Margaret Graham1

 

A very talented friend of mine sent me the synopsis of the novel she was writing for her Creative Writing MA. Her tutor had sent her away with a flea in her ear, and she came to me with no real idea of what she’d done wrong.
As a veteran of synopses of nearly twenty years standing, I saw immediately that she had made a very common error. Namely, she’d forgotten what a synopsis is. She thought she needed to show her thinking behind the book, and give the reader a flavour of what was to come. Consequently, she had managed to give far too much information, while also giving too little.

How is that possible?

 

  1. She wrote a lot about her main character, while neglecting the plot.
  2. She had included lines from the book, but with no context, they were irrelevant.
  3. She had tried to illustrated the themes in the book, but neglected the plot.
  4. She had tried to illustrate the humour in the book by describing the occasional amusing scene. But she’d neglected the plot…

 

Do you see where I’m going here? So when you sit down to write your synopsis, always remember that  this is not a creative work, so don’t try to be too clever. Clarity is everything.

 

So what do agents and editors want from a synopsis?

 

  1. They want 1500 words or fewer.
  2. They want an elevator pitch – a couple of lines that outlines the concept. The concept is a very strong consideration for all agents and editors, so make it snappy and memorable. For example, let’s take a recent bestseller – The Husband’s Secret. A happily married woman with three children discovers that her husband murdered a young girl when he was a teenager.
  3. A brief summary of the plot, key moments, key events, and main characters so they can see the arc of the story and judge whether the structure seems sound – leave out complicated sub plots, it will only bog you down in unnecessary detail.
  4. The end – and that means the end. Don’t hold anything back, this is not a cover blurb.

 

And that’s it. Easy peasy.
If you’re wondering about my friend, I sent her back to rewrite her synopsis several times. But it was worth it. She got an A for it in the end.

Each dish has been beautifully crafted by executive head chef Tong Chee Hwee and each symbolises luck, joy and prosperity for the year ahead.

Once settled, diners are greeted with a fabulously smooth and refreshing cocktail with Eldorado 3yrs rum, Amontillado sherry, banana, guava, lime, agave syrup and walnut.

Our starter of double boiled fresh ginseng and chicken soup with bamboo pith and wolfberry, was delicate with knotty cubes of tofu and the wolfberry was similar to cranberry.

It was soon followed by the Japanese wagyu beef with pine nut in a golden cup – delicious, crispy dices of meat which glistened in the crunchy shells.

As the har gau scallop shumai, Chinese chive dumpling, duck and yam bean dumpling was brought to our table, I couldn’t wait to sample them all.

The scallop was fresh and chewy and the duck dumpling was tender and more-ish.

Our table among the London business-types was decked with the main dishes, including wok-fry lobster in spicy truffle sauce which filled the palette with a trio of textures of crispy onion, slippery exotic mushrooms and leathery-like feel of the distinct flavour of the crustacean.

The pipa duck had a crusty skin and the meat was beautifully tender and flavoursome.

My favourite dish of the evening was the grilled Chilean seabass in honey – it melted in the mouth leaving a sweet and smoky aftertaste.

As we alternated between the main dishes of meat and fish, we also enjoyed the stir fry hericeum mushroom with lotus root asparagus and lily bulb in black pepper.

It was pleasing to the eye and the asparagus was lightly salted and cooked perfectly while the mushroom was surprisingly hard compared to the normal fungi we’re used to.

All the dishes were accompanied with a dried scallop and crabmeat fried rice.

The evening concluded with a soy caramel banana delice with chocolate and peanut. It was beautifully presented, sweet, cooling and a light touch to end our dinner experience.

Ruth Wilson Called Meeting Over Raunchy The Affair Sex Scenes, the affair, ruth wilson, boyfriend, sex scenesRuth Wilson got so upset by the amount of sex scenes in The Affair that she called a meeting to discuss it with the makers of the show. She says she found it “unnecessary and I felt uncomfortable”, adding: “Personally, I didn’t want to keep doing sex scenes and blow jobs.”

What followed was a chat with the directors and the show runner. Everything is now fine, she says.

“You have to listen to yourself in those situations. There’s still sex in it but it wasn’t expected that I would be nude.”

Ruth took the part in The Affair after getting annoyed with the lack of opportunities for women in Hollywood.

“To be honest, I wasn’t really looking at TV for America because I know the contracts and how long they are, but the film scripts weren’t good enough. There’s a very small number of women who get to do the best material that’s around, and there are probably only three movies scripts a year with good female roles in them. So there’s a limited amount of material to do. With television there’s so many shows led by women, it’s amazing.”

Ruth also talked about how hard it was to maintain a relationship when you are an actor. The 34-year-old actress told British Instyle:

“You can’t go on Tinder. You usually tend to find people you’ve known for a long time. It is difficult. Just the nature of the job means it’s difficult. The fame side of it is one aspect. But the fact that you are travelling a lot, or you have to be away a lot. It’s difficult to maintain a relationship even without the fame aspect of it.”

Ruth was asked about her rumoured relationship with Jake Gyllenhaal, she replied, “I don’t know. I don’t give much away and I don’t want to. It’s not anyone’s business.”

中国新的一年快乐 ( I hope this wishes everyone a happy Chinese New Year )

The next couple of weeks is a busy time in my kitchen, Pancake Day, Valentines, I have to cook soul food for Mardis Gras, a rocking Jambalaya, Buffalo Wings for when I watch the Super Bowl and most definitely celebrate the Chinese New Year. I hasten to add I am not American but they would kind of have this month’s events sewn in the bag if not for Chinese New Year. Now everyone has most likely had at one time in their life a Sweet and Sour or Cantonese Pork or Chicken from the local take away. You know the big deep fried doughy balls of slightly tough meat in a sharp Day-Glo orange sauce. It is about as close to being authentic Chinese as my mother is.

I can only hope to cap Sweet and Sour by giving you a version of a totally bastardised American Chinese dish. Again sweet, a little spicy and altogether created for the palates of mid-twentieth century America a dish called General Tso’s Chicken. The dish is named after General Tso Tsung-tang, a Qing dynasty general and statesman, however, any connection is very tenuous. The origins of the dishes invention are in the 1950’s influx of Chinese to the United States.

General Tso ChickenThe dish is reported to have been introduced to New York City in the early 1970s as an example of Hunan cooking though it is not typical of Hunanese cuisine, which is traditionally very spicy and rarely sweet. Fuchsia Dunlop, in the New York Times, identified the claim of a Taiwan-based chef Peng Chang-Kuei. Peng was the Nationalist government banquets’ chef and fled to Taiwan during the Chinese Civil War. In 1973, he moved to New York to open a restaurant and experimented and developed Hunanese-style cuisine adopting it for western tastes.

Other chefs claim that they created the dish or variations which include vegetables, meat other than chicken in a sweetened sauce. Later the chicken was deep fried before being added to the sauce, now almost every American Chinese restaurant has General Tso’s Chicken on the menu. Where the dish is cooked outside of the United States the dish is less sweet with more vinegar or rice wine vinegar and soy sauce in the ingredients. This is more to my taste and I have an admission I’m really rather partial to it, so here is my version.

General Tso’s Chicken      serves 4
As always a general note of caution
BE VERY CAREFUL WHEN FRYING IN HOT OIL.

 

1 Carrot, peeled and cut into fine strips

100 gr Button Mushrooms, wiped and quartered
1 Red Pepper, diced
A small bunch of Spring Onions, washed and sliced into 2 cm pieces
1 small Red Chilli, finely sliced
3 Cloves of Garlic, peeled and crushed
3 cm piece of Ginger, peeled and finely chopped
100 ml quality Chicken Stock
2 tablespoons of Oil
2 tablespoons Soft Brown Sugar
1 tablespoon Tomato Paste
2 tablespoon Sherry Vinegar
2 tablespoons Rice Wine or Dry Sherry
1 tablespoon Corn Flour
2 Cloves
A good pinch of Chinese Five Spice

for the fried chicken
2 skinned chicken breasts, washed and diced
2 egg whites
Juice of 1 lemon
50 gr Corn Flour
Sea Salt and Cayenne Pepper
2 pints Vegetable Oil

For the sauce heat the vegetable oil in a wok and stir-fry the carrots, mushrooms, garlic and ginger for two to three minutes then add the peppers. In a small pan, heat the chicken stock, vinegar, rice wine, sugar, cloves and Chinese five spice and bring to the boil. Simmer for twenty minutes then thicken with the corn flour mixed with a little water and the tomato puree. After another five minutes simmering, strain into the wok and set on a very low heat.

For the chicken, sieve the corn flour into a large bowl and add a generous amount of salt and cayenne pepper. In a separate bowl whisk the egg whites and lemon juice. Then dip the chicken pieces into the corn flour, the egg whites and back into the corn flour. In your wok or a large heavy bottom, pan heat the oil to 160°C / 320 F using a thermometer to check. If you do not have a thermometer have a few cubes of stale white bread to hand. Place a bread cube in the oil if it rises to the surface and cooks to a golden brown in a couple of minutes the oil is hot enough.

Fry the chicken in batches carefully lowering into the hot oil, for around six to eight minutes or until the batter is crisp and golden, turning from time to time with a large slotted spoon. When the chicken is cooked using the slotted spoon remove from the hot oil, drain on kitchen paper and place into the hot sauce. Add the Spring onions and simmer for a couple more minutes and then serve with steamed rice and garnish with a few extra, finely sliced spring onion tops.

Chris Pratt To Struggling Actors: ‘Don’t give up. It will break before you do’

Chris prattParks and Recreation actor Chris Pratt has said he always knew he was going to be successful. Pratt has achieved leading man status in films Guardians of the Galaxy and Jurassic World.

Chris posted teasers of the Guardians of the Galaxy sequel on his Instagram page. He posted a picture of his commute and wrote: “It’s 3:20am. I got picked up for work at 6:45am yesterday. I’m not good with math, especially after being up for approximately 61 hours but I think I’ve been up for over 77 hours. I did a table read for Guardians of the Galaxy 2 this morning and then shot all day on Passengers and just now wrapped some 144 hours later. Weirdly both films, which I’ll be shooting back to back, are being shot in Atlanta at Pinewood studios. We have the best crew. Total rock stars busting their asses. And the stuff we’re shooting. My God. I can’t wait for you to see it. I go back in in about 8 hours to do more.”

From a Mother to Another: 66,000 items of baby clothing saved from landfill & sent to those in need

66,000 shoes, boots & items of baby clothing saved from landfill & sent to those in need.

From a Mother to Another, the initiative from JoJo Maman Bébé, starts collecting again on 1st Feb 2016. The aim; to reduce the shocking levels of clothing waste that end up in a landfill whilst helping those in need in the UK with distribution via food banks plus helping thousands of Syrian refugees living in Lebanon.

JoJo will be collecting good quality outgrown or unwanted baby and children’s clothes in, sizes 0-6 years, at their 72 stores across the UK and Ireland. Customers are requested to make up complete outfits to give something worthwhile this mother’s day.

Nearly a third of the UK’s clothing ends up in landfill, equating to 350,000 tonnes a year. By extending the life of clothes by just three months of active use, carbon and water waste could be reduced by up to 5-10% a year. Sending good quality, little worn hand-me-downs to those in need could mean they are worn by many more children.

The emergency clothing packs will be distributed by some of the Trussell Trust’s 420 Foodbanks across the UK and by a number of partner charities on the ground in Lebanon. Helen Frank’s from Trussell Trust explains why she jumped at the chance to get involved;  “I am delighted Trussell Trust Foodbanks will be participating in the From A Mother To Another campaign with JoJo, it is a natural fit to The Trussell Trust’s ‘More Than Food’ approach, which offers additional services to help alleviate poverty in the UK. Over a third of three day emergency food supplies provided by Trussell Trust foodbanks go to children in crisis. From a Mother to Another is a perfect way for one mum to bring a little light and a lot of comfort to another.”

Laura Tenison, founder & CEO of JoJo, visited refugee camps in the Bekaa Valley on the Lebanese Syrian border late last year. As a result JoJo launched an urgent appeal to collect winter shoes and boots for the children living in tents, now under snow. Customers reacted with empathy and the thousands collected are currently being distributed on the ground to refugees with so little.  Laura explained what she found when visiting the camps; “The situation is dire and the millions of women and children living in makeshift tents are in urgent need of emergency humanitarian aid to help until it is safe to travel home – just a few miles across the border. They left Syria with whatever they could carry. Their children have outgrown their clothes long ago and are often in rags. The gift of a FAMTA pack brings tears of gratitude. Children are dying from the cold, we just had to help.”

JoJo Maman Bébé will cover the extensive costs of checking, sorting, shipping, customs clearance and managing the logistics of delivering the parcels to the partner charities in Lebanon and to the Trussell Trust’s Foodbanks across the UK.
