Vintage Pear Perfect Serve

50ml Charles Martell Vintage Pear Spirit
1 slice cinnamon coated pear
Add ice to a rocks glass and pour over the Charles Martell Vintage Pear Spirit. Cut a slice of fresh pear and sprinkle some cinnamon onto one side. Slide the cinnamon coated pear into the side of the glass, swirl and enjoy.Vintage Pear Sour
50ml Charles Martell Vintage Pear Spirit
15ml egg white
25ml lemon juice
10ml sugar syrup
1 dash orange bitters
Add all ingredients to a cocktail shaker filled with cubed ice and shake very hard. Double strain the mixture over fresh cubed ice in a rocks glass and garnish with a slice of fresh pear.

 


Vintage Apple Perfect Serve

50ml Charles Martell Vintage Apple Spirit
4 slice apple fan
1 dash orange bitters
Fill a rocks glass with cubed ice and pour over Charles Martell Vintage Apple spirit. Add a dash of orange bitters and stir gently, top with ice if needed and garnish with an apple fan.

 

Vintage Apple Elegance
50ml Charles Martell Vintage Apple Spirit
25ml Elderflower Liqueur
20ml fresh lime juice
2 dashes rhubarb bitters
Add all ingredients to a cocktail shaker filled with cubed ice and shake hard. Double strain the cocktail into a large wine glass filled with cubed ice and garnish with an edible flower and a mint sprig.
Apple Jack
50ml Jack High Cider Spirit
120ml apple juice
Fill a Kilner jar with cubed ice and pour over a double measure of Jack High Cider Spirit. Top the drink with apple juice (non-cloudy) and stir well. Garnish with an apple fan.

 

Jack High Mojito
50ml Jack High Cider Spirit
15ml sugar syrup
40ml fresh lime juice
10 fresh mint leaves
100ml soda water
Stir sugar syrup and lime juice in the bottom of a Collins glass and fill with crushed ice. Add the Jack High Cider Spirit and churn well to mix all of the flavours. Top the cocktail with soda water and crushed ice.
Garnish with a straw and a mint sprig.

 


Jack High Fruity Cup

50ml Jack High Cider Spirit
Mixed summer berries
6 fresh mint leaves
15ml fresh lime juice
100ml still lemonade
30ml soda water
Add plenty of cubed ice into a large wine glass and top with a handful of mixed berries and mint leaves. Pour over lime juice and Jack High Cider Spirit. Top with still lemonade and soda water – stir very well and top with cubed ice if required. Add a straw and enjoy!

Gillray’s Steakhouse & Bar is situated in a five star hotel, the London Marriott. Which is in turn located in the former seat of London’s government, County Hall, just across Westminster bridge from the Houses of Parliament. Walking up to the hotel to get to the restaurant, one’s breath is taken away by just how beautiful it is. It is so full of class and elegance that you almost feel it is from a different era.

The hotel itself is beautiful. The stuff dreams are made of and as we walk into the restaurant our first view is of a gorgeous English Gin bar, with riverside views of the Southbank. The bar is based on 18th-century social and political caricaturist James Gillray.

The Perfect Martini

 

We talk to Carlos, the bar room manager. Carlos is friendly, passionate and knowledgeable. It’s clear that no expense has been spared and a huge amount of effort has been put into every last detail. Gillray’s Steakhouse & Bar has 35 English gins, and it will soon be ‘over forty’. Only the very best make it onto the menu. The bar looks wonderful, almost like some fantastic chemistry cocktail laboratory.  Everything has been done to an exact science to ensure perfect quality and it comes across in the taste of the cocktails

The menu is fascinating and separated into eras, Georgian, Victorian, Edwardian, contemporary and modern Britain. Each era has its own brilliant Gillray caricature. Although the specialty is Gin there is a huge range of many different cocktails. A full menu can be found here

I ask Carlos for a recommendation and have the St James Martini, something I already had my eye on. It comes in the most perfect glass, looks great and tastes divine. If you love martini’s, make sure you try one.

My colleague has a ‘First Kiss’, made up of Hendrick’s gin with peppermint, lemongrass tea tincture, shaken with lime juice, sugar and fresh pineapple. The result is a delicious, refined and refreshing. One of the best cocktails he has ever had.

The cocktails were fairly expensive. Most of them are around £10.

However this a real experience. It is something unique that you will remember and it fully justifies the cost. Anyone who loves cocktails must try it, and everyone else should go at least once for the experience.

A quintessentially English dining experience, Gillray’s Steakhouse & Bar will celebrate the best of English when it launches at the end of March 2012.

Gillray’s Steakhouse & Bar will be the most English of English dining destinations, from the interior design to each cut of beef. Set in the County Hall, built 100 years ago to house London’s government, with views of the Houses of Parliament and Big Ben, few can claim a more inherently English location or vista.

The choice of namesake, James Gillray, a famed caricaturist of the late eighteenth century, reflects the political history of the County Hall’s past, and the intelligence, style and humour of the English personality. James Gillray’s work punctuates the menu and will be exhibited on the walls of the steakhouse restaurant and bar.

An English steakhouse of the finest design, Gillray’s Steakhouse & Bar is a homage to top quality beef -35-day dry aged Hereford Cattle from the Duke of Devonshire’s Bolton Abbey Estate in Yorkshire. The menu features nine cuts of steak – bone-out and bone-in – 300g Fillet on the bone, 450g Porthouse and 600g T-Bone steaks. Gillray’s Steakhouse signature dish, the 1000g ‘Bulls Head’ steak, will steal the show – a 1000g-butterfly cut, double rib steak served with the bone in.

Gillray’s Steakhouse & Bar is all about indulging in great English produce. Every inch of the menu reflects this, displaying English food at its best – Brixham Diver Clams & Mussel Broth, Foreman’s London Cured Smoked Salmon and hand chopped Steak Tartare.

The design is sophisticated but unpretentious, playing on the eccentric but charming details of classic lighting and furniture pieces, such as Chesterfield sofa and Waterford chandeliers, all bespoke designs by designers Blacksheep.


The bar offers a sophisticated and stylish Thames-side destination, featuring one of the finest selections of gin in London and an impressive cocktail collection designed by head bartender, Carlos Santos. The newly created cocktail menu is ordered by historical era, from the Georgian era – cocktails such as
National Debt, Wife & No Wife and Very Slippy-Weather each taking their name from popular James Gillray sketches – through to contemporary and modern English concoctions. The cocktail collection doesn’t stop there, but gives a nod to the next generation of cocktails – molecular mixology. >>
