SISTER SCRIBES: JANE CABLE ON CONTRADICTIONS AND RABBIT HOLES

For the first time in my writing life I am going back a couple of centuries. Not just with a glance over my shoulder, but really, properly back. With a good half of the novel taking place in 1815. It’s frightening – and exciting – and it’s requiring a great deal of research.

My research is centred on one family, their homes and their business interests. From that point of view, it should have been easy. Their country estate is in the hands of the National Trust, their town house still exists (albeit as offices) and their mine was one of the richest in Cornwall. What could possibly go wrong?

I knew before I started that nothing existed on the ground to show where the mine buildings once stood. I’ve walked past the field in roughly the right place numerous times, and apart from a few lumps and bumps, which may or may not be indicators, there is nothing there. What I didn’t expect was that the mine itself has almost completely disappeared from the records.

There is a portrait of the owner though, and a copy of it is in St Agnes Museum. It’s labelled as showing Ralph and his mine captain, with the mine in the background. Perfect. Except the original of the same painting in the Royal Cornwall Museum says it’s Ralph’s father, and that the mine is unknown. When I eventually found some corroborating evidence, and given when the artist died, the RCM version is almost certainly right.

This sort of thing has dogged my research. Sources you believe would be credible contradict each other. The National Trust had little to offer, telling me there was some confusion in the records as to which works on the house were completed by Ralph, and which by his son. Other sources claim more precision, but are they right?

My husband thinks this is a good thing, his theory being that if nobody really knows what happened, then no-one will know if I get it wrong. But as far as possible, I want to get it right. And thanks to the wonderful Courtney Collection at the RCM I am making progress. Not only are there some records of the mine (very little of it contemporary, however), but also an article from the 1960s about Truro’s Georgian townhouses. I popped in for an hour or two and stayed all day.

Herein lies the rub. The biggest danger of research isn’t necessarily the inaccuracies, it’s the rabbit holes. Does my story require me to know there were eleven shafts in the mine and their precise locations? I found myself becoming a total bore, pointing out to longsuffering walking friends exactly where they all were and the order they were dug. And how much a share in the mine was worth and how that was calculated. And the ages of the pumping engines. No, no, no. Completely irrelevant.

But all the same, it helped me to paint a picture, and some very useful facts did emerge. Like the mine was closed in 1814. It reopened later, but my novel deals in a very thin slice of time. And actually, the fact it was temporarily abandoned suits my story very well. Now I need to sift and sort through the rest of the information covering many pages in my notebooks, to work out what might be right – and what I actually need.

Oh, and I need to avoid any more rabbit holes and actually get writing.

SISTER SCRIBES GUEST: MERRYN ALLINGHAM ON HISTORY REPEATING ITSELF

“Researching history… changes our perspective, makes connections.” Historical novelist Merryn Allingham tells Susanna Bavin what she found by delving into the story of the Ottoman Empire.

 

When several members of my book group announced recently they didn’t like historical fiction, I was disappointed. But stunned when one went on to say she couldn’t see the point of history. For me, discovering the past doesn’t just illuminate quirky corners of a bygone age but helps understand the world of today. When I set out to research the background for A Tale of Two Sisters, a novel set in Constantinople 1905 – 1907, it was the nationalism of President Erdogan that I heard in my head, declaiming that Turkey had once been a great power and would be again.

So began my burrowing into the Ottoman Empire, a regime that lasted over five hundred years. The Ottoman Turks were indeed a great power, wielding influence over territories stretching from the Balkan States to the Horn of Africa. A multinational, multilingual empire, that  ended only after the Great War, when it was partitioned and its Arab region divided between Britain and France – helping to explain something of the Middle East today.

My research wasn’t all political. I had my characters travel on the Orient Express – I’d been fortunate to journey on the train myself, to Venice rather than Constantinople. Cocooned in gleaming blue and gold carriages, art deco compartments and mosaic-tiled bathrooms, I stepped back a century. Today the long journey to Istanbul is a once a year event, but in the early twentieth century it was part of the regular timetable and I gave my heroine the chance of travelling alone for the first time time in her life and to an unfamiliar, exotic destination.

I enjoyed researching old timetables, calculating how many days, how many hours, between one beautiful capital and the next – Paris, Munich, Vienna, Budapest, Bucharest – locomotives changing at every frontier, as one national railway system handed over to another. In all, the train covered a route of more than 1,700 miles before reaching Sirkeci station in Constantinople.

Topkapi Palace was my heroine’s destination and I still retain a vivid memory of my visit there. It was one of many Ottoman palaces in the city, sultans moving their court from palace to palace, often in response to external threat. Even though I saw only a small portion of Topkapi, I was overwhelmed by its opulence and beauty.

For this book, I wanted to dig deeper, wanted to know what life was like for the women who lived there around the  turn of the century. I’d read accounts by a number of intrepid female travellers to the Orient – Lady Mary Wortley Montague, Mabel Sharman Crawford, Mary Lee Settle – and been struck that, almost to the woman, their experience ran counter to the prevailing European stereotype of Turkish women as either decadent concubines or slaves.

Women spent most of their lives within the home, it was true, but within those four walls, they had absolute sovereignty. The harem was a sacrosanct space, not just a place where women were guarded, but a place of retreat to be respected. And if they ventured outside, always with a female companion, they were treated with courtesy. It was considered a sin to stare at women in public, for instance, and if a man behaved badly towards a woman, regardless of his position or religion, he would not escape punishment.

The truth, as always, is mixed. The Ottoman Empire was both civilising and brutal. Slavery continued until the last days of the empire, yet it was time limited for the individual and could be a means of social mobility. The children of the court were much loved, but in the early days of the empire, fratricide was frequent – the Ottomans did not practice primogeniture and male relatives seen as a threat to the potential sultan could be executed or imprisoned.

Researching history complicates that first simple ‘take’ on a culture and a period, changes our perspective, makes connections. And, crucially,  illuminates our own troubled present. Worth paying attention then!

Exclusive Paddy Ashdown Interview: On His Books

Paddy Ashdown has been a Royal Marine, the leader of the Liberal Democrats for eleven years, High Representative for Bosnia and Herzegovina, and is a life peer in the House of Lords. On top of that he has written 8 books, with the 8th coming out on the 5th of June. I can’t wait as I have loved all of his other books. I interviewed him about his books and politics. Here is part one.

Did you get the idea for A Brilliant Little Operation: The Cockleshell Heroes and the Most Courageous Raid of World War 2 while you were a member of the Royal Marines elite Special Boot Squadron?

No, my publisher approached me and said ‘it’s the 70th anniversary how about writing the book’. Which is my seventh book. I am just about to produce my 8th so it was a natural subject really.

What is your 8th book about?

The 8th book is about the largest resistance battle with the Germans in the Second World War. It is called A Terrible Victory, about the Vercors plateau on June 1944 and it was the biggest resistance German battle in Western Europe. [Learn more about the book here. That sounds fascinating. You have written quite a lot of books. Do you have a favourite?

I think the one I am working on now is always my favourite. I love writing books and whatever you’re working on consumes your mind so it is always the one you are most thinking about.

You’re books are very good. They are always very factual and have lots of history in them. How do you go about writing them. What is your writing schedule?

Writing The Brilliant Little Operation, and the one I am going to produce, Harper Collins will publish it on the 5th of June, takes me about three years of research. I mean, I start writing before then and overall I don’t like writing unless I have all of the research it is possible to get. Normally the whole process will take my three and a half to four years. Of which three years is spent on research. Going to the wonderful archive museum in Britain, the National Archives in Britain. In the case of both of my most recent books, to the Château de Vincennes in Paris, In France there are three key archives you have to go to. And also the Bauhaus-Archiv in Germany.

I spend a lot of time in archives. In writing my present book I have read sixty other books on the subject, all of them in French. In writing a Brilliant Little Operation I have read four books before and a lot of research. So research is very important.

Two Thirds of Men Would Be Happy To Be a Stay-at-Home Dad

It is true that women and men will never be equal until men take up their share of childcare (and while we are at it, domestic chores) and it seems that that might actually be happening. A recent survey suggests that two thirds of men would be happy to be a stay-at-home dad.

Despite mums traditionally dealing with the majority of childcare, three quarters of men say they would be happy to quit work during their son or daughter’s first year so that their partner can return to their job, instead of taking the usual period of maternity leave.

And almost one in twenty men are already responsible for looking after their children whilst their wife or girlfriend goes to work.

It also emerged that 72 per cent of women would also be happy if their other half wanted to look after the children with 65 per cent worrying about the effect any time off would have on their career.

The statistics emerged in a study commissioned by national law firm Irwin Mitchell a month before a change in the law which will see couples have the opportunity to start sharing parental leave.

But these results show the new laws designed to encourage parents to share time off work following the birth of their child look set to be far more popular than government predictions had previously stated.

Irwin Mitchell employment partner Glenn Hayes said: “For a long time now, the traditional roles have seen dads returning to work just days after their baby has been born, while mums take a year or so away from their career to look after the children.

“But times are changing and it’s becoming easier, and more acceptable, for dads to take on the role of caregiver, while mums become the main breadwinner. What’s more, it seems the majority of men are happy to have it this way around.

“Thanks to changes coming into effect in April, working couples will be able to share that period of leave over the first year, meaning neither one has to miss out on such a large amount of time away – whether it’s from their career or baby.

“Shared parental leave is one of the most significant changes to flexible working rights but it is still uncertain how many families are expected to take up the new right.

“According to Government projections, as few as 5,700 men will apply over the next 12 months, but the figures in this survey suggest that the appetite for doing so could be much stronger with take up being much higher.

“So it’s important businesses and employers need to be prepared for the changes before they come into force, and know their rights as well as those of their employees.”

The study of 2,000 men and women found 66 per cent of men would be happy to take on the role of stay-at-home dad, whilst another three quarters would happily work part-time to allow their partner to return full-time.

Four in 10 say this is down to them wanting to be a bigger part of their child’s life than they would be if they worked full-time while 19 per cent worry they will miss out on too much of their child’s life otherwise.

More than a third say it’s the most sensible option for them as their wife or girlfriend earns more than them, with another 23 per cent not enjoying their job whilst their other half does.

One in twenty said taking the time off work will be less detrimental to their career than that of their partner.

Other reasons men want to take on the childcare role include it being easier for them to work around school or nursery hours than their partner, believing it would be less stressful to look after the kids than go to work and not wanting to commute anymore.

Sixty-one per cent even claimed they would be happy to become a stay-at-home dad, even if it had a detrimental effect on their career in the future.

But the researcher found that whilst most would be happy to share their decision, 23 per cent of men wouldn’t be comfortable telling their friends about their plan to be a stay-at-home dad, while 49 per cent would be worried about others judging them.

Glenn Hayes, an employment Partner at national law firm Irwin Mitchell, added: “These figures may take businesses by surprise and it is vital that they deal effectively with what is an extremely complex piece of legislation.

“It is important that employees start their conversations with their employers as early as possible in relation to shared leave, but it is vital that companies deal with the requests in the correct manner.

“Many businesses have been slow to prepare themselves for this important change and in doing so have left themselves exposed open to the risk of mishandling requests and inviting claims for discrimination.”

Shared Parental Leave rules allow those whose children are expected to be born or adopted from 5 April will be able to share up to 50 weeks of parental leave between mum and dad during the first year after a baby is born/child is adopted.

Previously, the majority of dads had two weeks paternity leave while mums could have up to 12 months maternity leave and nine months paid maternity leave.

 

 

Sneaky Wedding Costs You Need to Look Out For By Melissa Davis

Wedding First DanceAlthough your wedding day is supposed to be one of the best of your life, the large cost can often mar this otherwise happy occasion. In the early stages of planning a wedding, the smaller details often get forgotten and the cost can sneaks up on you, making the overall price of the wedding unexpected and often damaging. However, there are ways and means of reducing the overall cost of your wedding and making your special day affordable. Considering the hidden wedding costs you may incur is a positive start in ensuring your wedding remains within your personal budget.

Making a list and using online resources to research the smaller aspects, which you may not have initially considered, will show you where your money can go and how much of it can go there. This will allow you to then find cheaper alternatives to lighten the financial load further. For example, although brides often think of their wedding dress, they rarely remember that alterations often have to be made. Similarly, bridesmaids’ dress and the groom’s tuxedo may need amendments right before the big day. These minor adjustments may seem small, but will set you back money and add up to a considerable amount when added to the multitude of other wedding costs. To prevent costs such as these from sneaking up on you, simply research, estimate the price and factor this into your budget.

Start with a wedding budget

A thorough, realistic budget is the best tool for preventing forgotten, unexpected and unnecessary costs from sneaking up on you during your wedding planning.

Work out how much you can afford to spend in total, make a list of everything you need to sort then decide how you’ll divide your wedding budget.

Try to make your list as detailed as possible, and ensure that you set aside enough for each item. Recently married friends, wedding magazines and websites are all good sources of advice.

Suddenly realising that you forgot to budget separately for the bride’s shoes, veil or accessories after you’ve spent your money on an expensive dress is exactly the sort of stress you want to avoid as your big day approaches.

You should also look at prices or ask for quotes early on to ensure that the money you set aside for each cost is realistic.

Wedding costs everyone forgets

However carefully you plan your budget, there always seems to be something extra that needs to be organised and paid for before the big day arrives.

Here are some of the most frequently forgotten costs – make sure you remember to include them:

  1. Registration costs to make your marriage official.
  2. Stationary and postage costs for sending save the date cards, invitations and thank you cards.
  3. Accessories and alterations to suits and dresses for the wedding party.
  4. Including the bride and groom in the head count for the reception.
  5. Favours, thank you gifts and tips.
  6. Extra charges on your bill from venues and suppliers, including delivery fees, corkage, VAT, overtime and service or cleaning charges.
  7. Printing and framing photos, and buying wedding albums.

Deciding what to spend

Once you have a list of everything you need to pay for, you can start deciding how much you want to spend on each item. The way you do this should depend on your overall budget.

If money truly is no object, you can simply start arranging.

If, like most people, you have a set amount of money to spend on your wedding, perhaps from your savings or a parental contribution, you should start from this upper limit and divide it into portions for each of your expenses.

You can easily create a spreadsheet, or adapt a general expenses template, to monitor your spending. Keep track of any overspends, which you should try to make up for by spending less on other items, or underspends, which will give you more to spend elsewhere.

If you’re trying to keep costs to a minimum then prioritise your list into must-haves and maybes so that you can make sure you can afford the aspects that are most important to you before paying out for things that are ‘nice to have’ but not essential.

Avoiding unnecessary wedding extras

If you are working with a limited budget, it’s possible to make some cuts to the normal list of wedding necessities.

For example, if you can choose a venue where you can hold both the service and the reception, you might be able to get a better deal, and you can also cut down on transport costs.

Weddings held out of peak season or on any day other than a Saturday will usually be cheaper because there’s lower demand so this is worth investigating.

It can also be a good idea to look closer to home for your venues, since you can avoid high travel costs or needing to pay for overnight accommodation.

You might also be able to cut down costs by limiting the number of guests you invite – either in total or just to the wedding breakfast. Having a buffet and/or a pay-for-your-own-drinks bar can also help.

You can always give people the chance to celebrate with you at a distance with a live online broadcast of the event, no matter where the wedding takes place.

Another good way to cut down on your costs is to consider doing more of the work yourself or asking friends or family to gift their time as a wedding present.

Why pay for ready-made wedding favours when you can put together something more personal at half the cost? Why spend your wedding day in an anonymous hotel when you have a huge garden where you could put up a marquee and celebrate in a place that means something to you?

Minimising unexpected costs

To give yourself a little leeway make sure you set aside an amount to cover unexpected costs, ideally about 10% of your total budget.

If one of your suppliers lets you down, an unexpected guest turns up, something is broken or turns out to be unsuitable, or the weather forces you to change your plans, you need to have some emergency funds available to deal with it. Another option is to take out wedding insurance to cover some of your major expenses.

It might not be possible to avoid all unexpected costs, but at least you can be prepared for them, and if it turns out that you never need to use this money, it can give you something extra to spend on your honeymoon.

The wedding price hike

Another particularly sneaky cost that you might not expect when you set out your wedding budget is the sudden bump in prices that can occur as soon as you mention that you’re ordering for a wedding.

It doesn’t matter if you are ordering flowers, a cake, or transport, as soon as suppliers find out it’s for a wedding, they often assume you can easily be coerced into spending more to make your day perfect.

One of the best ways to avoid this sneaky extra cost is to tell some little white lies and order things for a “party” rather than a wedding.

It might not work if you want a traditional tiered wedding cake, but if you are looking for something less conventional, or ordering something non wedding specific, it could help you to get some lower prices.

New Study Highlights Crucial Role of Red Meat in Plugging The Nutrition Gap

Millions of people in the UK are putting their health at risk because of inadequate intakes of vital vitamins and minerals, a new study has revealed. But the research also highlights just how important the role of red meat is in the diet in helping to cover this nutrition gap.

 

Meat has been a staple part of the human diet since the dawn of mankind, but in recent years there has been some debate over whether too much red meat can raise the risk of health problems. Now a team of researchers has studied the issue of meat in the diet to help gauge just how important it is for a healthy mind and body – as well as the crucial nutrients that red meat in the diet brings.

 

The latest study found that data from dietary surveys indicates that UK diets for people of all ages can be worryingly low in nutrients normally found in meat, such as vitamin A, vitamin D, iron, magnesium, zinc, selenium and potassium. The researchers say that integrating red meat into diets across the age spectrum, from infanthood to old age, may help to narrow the present gap between vitamin and mineral intakes and recommended levels. In addition, there is emerging evidence that nutrients commonly found in red meat may play a role in supporting cognitive function, immune health and addressing iron deficiency.

 

Independent dietician Dr Carrie Ruxton, together with Emma Derbyshire, Senior Lecturer in Human Nutrition, Manchester Metropolitan University and Prof Robert Pickard, Emeritus Professor of Neurobiology, University of Cardiff, studied data from 103 previous scientific research papers. Many of the previous studies drew from the UK National Diet and Nutrition Survey (NDNS) – now an annual rolling programme which provides a valuable insight into the nutritional quality of modern diets. The new paper – entitled Micronutrient challenges across the age spectrum: Is there a role for meat in the diet? – is just published in the British Nutrition Foundation’s Nutrition Bulletin.1

 

The role of red meat in the diet

Red meat – defined as beef, veal, pork and lamb, which is fresh, minced or frozen – is a source of high quality protein and important micronutrients. Beef and lamb are classed as a ‘rich source’ – more than 30% of the recommended daily allowance (RDA) – of vitamin B3 (niacin), B12 (cyanocobalamin) and zinc. It is also a ‘source’ – 15% or more of the RDA – of iron, potassium and phosphorous. Pork is also a ‘rich source’ of vitamin B1 (thiamin). Meat, particularly from grass-fed animals, can be a valuable source of long chain (LC) n-3 polyunsaturated fatty acids (PUFA) such as omega 3 fatty acids. Research shows that these fatty acids support normal foetal development as well as help lower the risk of inflammatory conditions, depression and dementia in later life. Red meat is also an important source of haem iron – a type that is readily absorbed – and data shows that average iron intakes in the UK are inadequate, especially among females in general and during pregnancy.

 

UK nutrition – the seven ages of mankind

 

  • Infants and pre-school children – studies show that diets in this age group are low in vitamin A, vitamin D, iron, zinc.
  • Pre-pubescent children – diets were found to be low in vitamin A, magnesium, iron and zinc. Boys tended to have higher intakes of iron and thiamin than girls.
  • Teenagers (13 to 18 years) – diets are low in many key nutrients – including vitamin A, vitamin D, iron, magnesium, zinc, selenium and potassium.
  • Adults of reproductive age (19-50 years) – diets, particularly for females, fall short in magnesium and iron, as well as zinc, selenium and potassium.
  • Pregnancy and lactation – Women on average fail to get enough calcium, magnesium, iron, iodine, selenium and potassium and vitamin D.
  • Middle-age and older age (50 years and above) – while this group have better quality diets, there are still shortfalls in intakes of magnesium, zinc and potassium.
  • Older-age (75 years and beyond) – data shows that in adults aged over 85, intakes of magnesium, zinc and potassium are below the recommended nutrient intake.

 

How meat affects health – latest investigations

While some studies have linked high levels of meat consumption with health issues, the evidence is inconsistent and the research varies in its quality – for instance one paper that found a link between meat and obesity included pies and pastries as well as lean cuts of meat. Indeed, other research found that lean meat consumption does not impact on risk of chronic disease. Chemicals called heterocyclic amines may be produced when meat is cooked or charred and these have been linked with an increased cancer risk. However, there is also evidence that meat contains nutrients with anticancer properties, such as LC n-3 PUFA, conjugated linoleic acids, vitamins B6, B12, D and selenium. In addition, older studies may not be so relevant today as the fat content of meat has reduced considerably over the past few decades as a result of changes in breeding and animal feeding practices.

 

In terms of heart health, a study showed that eating red meat (lamb) three times a week had no effect on low-density-lipoprotein levels – the so-called bad cholesterol – or triglycerides, both factors for cardiovascular disease, when compared to white meat. In another study of patients with high cholesterol levels, those who ate red meat every day were found to have fewer markers for heart disease. Studies have indicated that meat protein could help delay or reduce the gradual loss of muscle mass – a condition known as sarcopenia. Diet when younger may play a part in mental ability when older – data from a Chinese study found that adults aged 50 years and over who ate meat in childhood had improved memory recall. The Scientific Advisory Committee on Nutrition (SACN) – made up independent experts and which provides advice to the Department of Health – recommends that adults should consume a balanced diet with up to 70g of lean red meat per day and up to 500g per week.

 

Independent dietician Dr Carrie Ruxton, who led the study, says: “Meat has long played a central role in the human diet and is now recognised as an important source of high-quality protein and essential micronutrients. The research indicates that even in developed countries such as the UK, with a plentiful food supply, there is evidence of under-consumption of key vitamins and minerals which support long-term health. It is notable that many of these are present in red meat, such as iron, vitamin A, vitamin D, selenium, magnesium, potassium and zinc.

 

“Integrating red meat into diets across the age spectrum, from infanthood to old age, may help to narrow the present gap between intakes and recommendations. In addition, there is emerging evidence that nutrients commonly found in red meat may play a role in supporting cognitive function, immune health, and addressing iron deficiency. While concerns have been raised about the potential impact of meat on the risk of chronic disease, there is little evidence and may be triggered by meat cooking methods or other dietary factors.

 

“Moderate amounts of lean red meat provide a wide range of important nutrients, without substantially increasing intakes of energy and saturated fat. When consumed in moderate amounts as part of a balanced diet, lean meat is unlikely to increase the risk of chronic disease yet provides an important source of micronutrients. In addition, people who eat lean meat regularly tend to eat more vegetables, fruits, low-fat dairy products and have a higher intake of nutrients overall, suggesting that inclusion of red meat does not displace other important foods.”

 

Dr Ruxton adds: “Meat had a central role in the diet of early man and continues to do so in modern times. When eaten as part of a balanced diet, red meat represents an important source of protein and essential nutrients, which may contribute towards improving diet quality from weaning to old age. Recommended intakes for red meat – up to 500g cooked weight per week – would appear to be safe and most UK adults are within this range.”

“It’s just lovely,” says Richard Reilly, Managing Director of Kinnerton Confectionary. Everyone knows  everyone, and people tend to help out where they can. Around Easter sometimes we make eggs for each other.”

I nod through a mouthful of rum and raisin ganache truffle. We’re standing in the British Library, a venue aptly ripe with imagination and invention for the Chocolate Industry Network, where manufacturers, innovators and gluttons gather annually to discuss their dearest subject. There are tables covered in samples, chocolate moulds, chocolate history, chocolate everything. “You should come see the chocolates being made in the Norfolk factory. It’s beautiful,” adds Richard. But the business of making chocolate seems rather sweet. Richard is keen to stress this point, enthusing: “Everyone knows about the main producers of course. But there’s camaraderie among the lesser-known chocolate makers. We’ll happily make things for one another here and there. Co-operation is good, it’s all about trade.”

And so riding our sugar high, we network away. The day consists of a mixture of lectures, discussions, and general chat over the good stuff. Refreshing lemon drinks are on offer for those who have had a little too much. I learn about the always-encouraging health advantages from Leen Allegaert, an innovation manager in clinical research. Apparently just 10 grams of high-cocoa chocolate provides beneficial flavanol, an antioxidant which helps to maintain the elasticity of blood vessels. This contributes to normal blood flow and general cardiovascular health. “And that amount only contains 55 calories. It’s pretty reasonable,” adds Leen. It occurred to me that I must already have consumed enough chocolate during the day to reap the delightful effects of flavanol many, many times over.

chocolateThere are inspirational stories brewed in the conches of chocolate factories all over the world. Heikel Ethel, owner and manager of the Lebanese company Ethel Chocolates, describes his embryonic creations when he set out to form a business in the early nineties: “I clumsily sandwiched biscuits – I bought bags of all kinds that I could lay my hands on- with chocolate for the children in the local villages around the Bekaa Valley.” Heikel was quick to respond to sweet-toothed demand, and his business grew swiftly. He bought a building, machinery, and took his brother on as sales manager. Two decades later what began as a one-man show is now one of the most well-regarded luxury chocolate brands in the world, operating out of 160,000 square metres of factory space. I sample several of his elegantly-packaged wares, they are refined and delicious.

There are still constant challenges, ones particular to operating within a turbulent environment. Ethel describes his approach as “The Lebanese reaction to a tough time.” Things change quickly, and he adapts. “Fuel and electricity are expensive at the moment. But we still train every employee how to wrap chocolates perfectly.” He stresses that Lebanon is an “open market country”. Saudi Arabia and Kuwait are the biggest buyers of his chocolates in the Middle East.

On the other side of the coin is Charbonnel et Walker, who have sold chocolates since 1875 out of their flagship store on Old Bond Street. Peter Irvine, Director of UK Sales and Export was adamant that even despite cruelly high rent, they would never change their location “to say, Regent Street”. Tradition is everything, even among employees. “Our average experience level on the core team is 25 years,” he added.

And Charbonnel have – gradually, carefully, made some headway towards attracting a younger market. Their ‘handbags and heels’ range of shaped chocolates shifts 250,000 units per year, and their target demographic is no longer the over-sixties. Women between 35 and 50 are now Charbonnel’s most devout consumers – though their pink champagne truffle sets hearts racing across the board. Charbonnel remain suspicious of new trends. Peter sniffs that while introducing a sea salt flavour was a “brave but unavoidable risk”, you’ll “never see us start to use chilli. It’s not for us, and others do it better.” They ought to know what works. Charbonnel sell chocolate at a breathtaking £75 per kilo, a staggering margin beyond any other company present today.

Chocolate is addictive. Once they enter the chocolate world, people tend to stick around. “It’s a good place to be,” muses Richard Reilly. “One thing I would emphasise is the importance of ethics, though. People get very hung up on the idea of organic. But the thing is, that’s all just a question of certification. Cocoa is grown in places that are organic by their very definition. If you’re willing to pay a little extra for chocolate, spend it on fair trade. Make sure people are paid fairly.”
