Chocolate and Raspberry Cake

Baking cakes is one of the best pleasures in life and they are so easy to do. All you need to have is the basic foundation ingredients and you can simply add whatever the devil you like. We love a good chocolate cake but sometimes you need to have a few fresh and new ideas up your sleeve. Not that chocolate ever gets boring. This recipe is totally delicious and perfect for those who are Lactose intolerant.

Chocolate and Raspberry cake

You will need:

  • 250g Plain flour
  • 250g Dark brown sugar
  • 175g pure Cocoa
  • 2 eggs
  • 250ml of lactose free milk
  • 1 tbs Vanilla essence
  • 1 tsp of baking podwer
  • 1 tsp bicarbonate of soda
  • 1 tray of fresh raspberries
  • 2 tbs icing sugar
  • 150g Dark chocolate

Chocolate and Raspberry cake

Place all the dry ingredients into a large bowl along with the eggs.

Bash up the chocolate while its still in the wrapper.

Drop it into the bowl and mix well, then add the raspberries. Leaving a handful to garnish later.

P1150751Place this into a lined greased large cake tin and level off.

Pop this into the oven for about 35-50 minuets depending on how soft and gooey you want it to be in the middle.

Take out of the oven and leave it to totally cool before dusting with icing sugar and serving.

Affordable And Amazing Wedding Cakes | The Wedding Diary

The craziness of the wedding industry really shows up in the price of wedding cakes. When my fiancé and I first started looking, we couldn’t find one for less than £350, and most of them weren’t even nice. If you take away the fact they have the word ‘wedding’ in front of them, would anyone actually pay thousands of pounds for a cake? I think not.

In saying that, there are a lot out there with the craftsmanship and design that makes the price worthwhile. If you want great design at a good price then I recommend going the supermarket route. My fiancé and I got our wedding cake from Waitrose.com. Marks And Spencers also do great, affordable wedding cakes.

And (drum roll) here is our wedding cake. It matches our wedding colours of pale pink, pale green and white. We love it and got it in a mixed filling of vanilla sponge and fruit cake.

wedding cakeWhen buying a wedding cake make sure you check how many people it serves. The website should tell you or ask your baker. Another thing to check is if decoration is included. Some cakes look amazing but the small print says that the decoration is not included. This is also an easier way to get a cheaper cake, if you decorate it yourself, it costs less. Although there is the added stress.

While researching wedding cakes I saw a lot of gorgeous wedding cake toppers on ebay and ribbon is very cheap to buy from a haberdashery. You could also make your own or get a relative to make one. Although I would not do this if you weren’t brilliant at baking. Waitrose.com also have some guides on decorating your wedding cake and the BBC also have a great blog on making your own wedding cake.

Foxcroft & Ginger Cafe Review

Foxcroft & Ginger is a very trendy cafe and artisan bakery in East London, owned by couple Georgina and Quintin. It is full of people who are far cooler than me. The decor is eclectic, keeping the industrial-chic design ethos of the Soho branch.

This one, in Whitechapel, only opened on 3 April 2014. We went to review it, deciding on brunch. We started with Eggs Benedict and Smoked Salmon, Pickled Beetroot, Avocado, Tomato and Red Onion Salsa, Grilled Sourdough. I also order some avocado on the side. The Eggs Benedict is interesting. My colleague loved it. He thought the eggs were perfect, but the egg I had was a bit watery, and the sauce could have done with a little more punch. The salmon dish was perfect however, just an amazing selection of fresh ingredients that work amazingly well together. The avocado was great with just the right amount of salt, olive oil and lemon.

The hot chocolate was very good, it came with spice and the cinnamon really added something special. The tea was also great, coming in a very cute tea cup and saucer.

After our brunch we had some amazing cake. I had the chocolate orange cake and my colleague had the carrot cake. Both were absolutely amazing. Everything is made in-house and these cakes really were superb.

Foxcroft & Ginger also do amazing bread. Their coveted sourdough bread, which is already supplied to a number of top London restaurants, is available to purchase in store.

Facebook ‘Likes’ More Important Than Birthday Cards

‘LIKES’ OVERTAKE CARDS AND CAKES AS HOW WE MEASURE THE SUCCESS OF OUR BIRTHDAYS

The impact of social media has totally revolutionised how we celebrate our birthdays according to new research by leading gift card company One4All.

Facebook has become the number one way we wish our friends and loved ones a happy birthday.  76% of us will post a greeting to friends on social media and a quarter of people say that the number of messages they receive is the main way they would measure the success of their birthday.

The research also suggests that many of the traditions that would normally make our day special are being undermined.

60% of people say that they rarely take their birthday as a day off from work and only 15% of people said that they would always have a birthday cake.

The main reason for having a low-key birthday is stress.  A third of people say that they find their own birthdays stressful and would rather celebrate someone else’s.

Declan Byrne, Managing Director UK of One4all, says, “Social media now plays a huge part in all of our lives and it’s interesting to see how it has impacted on the traditional birthday.

“It’s a social shift that is affecting many businesses who provide a service linked to birthday celebrations.  For example, it’s led to us creating online group gifting, where friends can come together through social media to contribute to a joint gift.”

As a result of these findings One4All is also attempting to raise awareness of the need to keep birthday’s special and is launching a social media campaign for people to ‘out’ Birthday Scrooges and encourage them to have a proper, traditional birthday celebration.

“While times do change, it would be nice to think that birthdays will retain their special status,” says Declan. “As a result we want to encourage people to make sure they still take time out to celebrate with friends and family.”

Organising your very own bash couldn’t be easier and requires just three very simple ingredients: tea, cake and friends!

FestiviTea Parties are a chance to roll up your sleeves, don your aprons and bake up a storm with your nearest and dearest, whilst at the same time raising vital funds for the National Autistic Society. You can hold your party anywhere and at anytime. Whether it’s at home, work or out in the local community, you can make your FestiviTea Party as elaborate or as laid back as you like. How you choose to raise the money is also up to you – ask guests to buy tickets, make a donation, or pay for the cakes and biscuits you bake!

Christmas can be a stressful time for many families, but it can be extremely difficult for the half a million people affected by autism, who can often become confused and frightened by sudden changes of routine, unusual foods and new social activities. We need your help to continue to provide vital support and services for individuals and families affected by autism across the UK.

Bake a Difference with ‘Cake Boy’ this October to help support some of the world’s poorest people

Local celebrity patissier Eric Lanlard calls on cooks nationwide to help raise funds to support Concern Worldwide’s life-changing work.

Eric Lanlard, owner of luxury cake boutique, Cake Boy, is asking people across the country to Bake a Difference and raise vital funds for Concern Worldwide’s work in tackling hunger in some of the world’s poorest countries.

Concern Worldwide’s London office is based on the river in Battersea, near to Cake Boy.

Bake a Difference runs in association with National Baking Week, (17-23 October) and Concern wants people to hold bake-sales during the week, at school, home or work, and donate the proceeds towards Concern. All money raised will go towards Concern’s child nutrition programmes.

“I adore baking, for work and for pleasure. It’s the perfect way to relax, and make something wonderful for your friends and family. And cake sales are also a simple and fun way to raise money – no-one can resist a cupcake baked for a good cause. So this October, I’m asking fellow baking enthusiasts to set aside some time and hold a cake sale or coffee morning for Concern Worldwide’s Bake a Difference campaign. All the money you raise will go towards Concern’s work with children suffering from malnutrition, children who without Concern’s help might not survive. Getting Baked {Ceri's Column}

When we celebrate, we eat cakes. It’s pretty damn universal. Almost every culture on the planet stakes its claim for having the best cakey offerings. It can be quite competitive. I’m shocked there hasn’t been a war over it yet. The Great Fruitcake Wars. The Eccles cake incident. The Cupcake Rebellion of 2010. That’d be awesome. I’d fight.

Of course, being more Welsh than a wool hat full of leeks makes me thoroughly defensive of our baked, boiled and griddled offerings. Our goodies are far tastier, heartier and far worse for you than anyone else’s. The jewel in our crumbly crown is the amazingly addictive Welshcake, or Pice ar y man (Pick Arr Er Marn) as I call them. Stick your scones where the sun doesn’t shine, pics rule.

But other countries have good stuff too! Here are my personal faves…

1. Punschkrapfen (Austria) – This beauty is a concoction of chocolate nougat, apricot jam, crumbly cake and rum (yes RUM!) My lord it’s good.

2. Churos (Spain/Mexico) – Hispanicy/Americany Doughnuty heavenly thing…y. I had my first Churo in California about 10 years ago. If I ever go to live in the States, I’d write “Churos” as my “Primary reason for applying for your Green Card”

3. Puff Puff (Nigeria) – A rip off of the superior Churo. I just included it for the name really.

4. Twinkies (USA) – Guilty pleasures are always the best.

5. Opera Cake (France) – Oh France you opulent fucker. Layers of almond sponge soaked in coffee layered with ganache and butter cream and glazed in dark chocolate. Hasn’t really got much to do with Opera in my book, but who gives a crap when you’re eating ganache in such large quantities?

6. Mochi with red bean paste (Japan) – Nippon, you rule.

7. Jaffa Cakes (UK…well Scotland really) – Is it a cake? Is it a biscuit? It’s a fucking cake you idiot.
